  1. First in vessel boil the cow milk. In a small bowl mixed vinegar/lemon and water together keep aside. As milk starts boiling put first 2 spoon vinegar/lemon water mixture in it and stir Don't put all mixture. You will be chhena had started becoming, now put remaining mixture in it and keep stirring. Water colour had changed to greenish. Off the gas.
  2. Remove it in a clean nappin and wash it 3/4 times to remove vinegar/lemon smell. Remove all water from it and tie it. Keep in fridge for 1 hour
  3. After one hour remove chhena in a plate. Aside keep buffalo milk for boiling in a big bottom vessel to avoid felling of it. Once boiling starts become remove little hot milk in small bowl and put kesar in it. In milk add kesar milk and sugar. In Between stir it on low flame still all sugar dissolves in it.
  4. Add 1 spoon sugar in chhena. With the help of palm down side press on chhena to make it smooth. This process will take approx 10 minutes as depends upon your chhena and your press speed.
  5. Check it by making a small ball without crack if coming that means your done properly. Now start making small round flat rasmalai of all.
  6. Now we have to put rasmalai in our boiling milk. Remember we don't have to put all together at once. When milk is boiling put 2-3 in it. You will see your rasmalai floating up that means it is properly. Again put 2-3 in it when milk comes boiling. If you put all together temperature of milk drops and your rasmalai will break therefore when it is in boiling hot that time we have to put. And don't keep on stir it. Put dry fruits.
  7. Keep it for 15 minutes. Vrat/fast/upvas rasmalai is ready. Cool and keep in fridge. Have cool as taste nice. Garnish with some dry fruits and enjoy
