  1. Prepare 1 cup canned/ cooked green lentils drained and rinsed
  2. Take 1/2 cup toasted coconut (dry or wet flakes)
  3. Get 1/3 cup toasted sunflower seeds
  4. Prepare 1/4 cup honey
  5. Get 3 tbsp coconut oil
  6. Make ready 3 tbsp cocoa powder
Steps to make Lentil Fudge:
  1. Place lentils, seeds, coconut, cocoa and honey in food processor and pulse until all ingredients are incorporated and smooth, scoop into a mixing bowl, warm coconut oil and stir into the lentil mix.
  2. Line the bowl with parchment paper and transfer mixture, smooth the top, cover and place in refrigerator to chill for 3 hours or overnight. once chilled, cut in cubes and serve.
