  1. Get 1 red onion
  2. Take 6 cloves garlic
  3. Take 1 green pepper
  4. Make ready 1 red pepper
  5. Prepare 2 carrots
  6. Take 1/2 cup green lentils (soak & rinse)
  7. Make ready 1/2 cup red lentils (dry & rinse)
  8. Prepare 1 litre hot water
  9. Get 1 tsp vegetable stock
  10. Get 1 can tinned tomatoes
  11. Get 2 tbsp olive oil
  12. Make ready 1 tbsp tumeric
  13. Get 1 tbsp smoked paprika
  14. Take Salt (to taste)
  15. Prepare Black pepper (to taste)
Instructions to make Low GI Vegetable & Lentil Stew:
  1. Chop vegetables and fry in oil.
  2. Add spices and continue frying.
  3. Add can of tinned tomatoes and 1 litre of hot water mixed with vegetable stock.
  4. Add soaked and rinsed lentils. Cook in a pot for 70 minutes. We use our Tefal 10-in-1 and set it in "Stew" mode.
  5. Serve with brown rice. There's enough for leftovers!
