Prepare 1/2 spoon oregano

Get Approx 3 to 4 cup Water for boil
Get 2 spoon Parsley/coriander leaves chopped for garnish
Prepare 1/2 spoon black pepper powder (optional)
Instructions to make Mix lentil Mexican khichadi (Jain and regular):
First wash all lentils (toor daal, urad daal, moong mogar daal) and rice properly.. take 1:2 ratio if bowl rice and lentil than take 2 bowl water.. put lentils, rice and water in pressure cooker add salt and turmeric and cook till 2 wistles..
Boil broccoli florets, sweet corn, peas, baby corn and french beans..by adding 1/2 spoon salt (for regular boil carrot)
Drain boiled veggies and wash chopped bell peppers zucchini cut in long pieces.
Take a heavy bottom pan..put olive oil and add onion (for regular) satue till it is translucent.. then add ginger paste and chopped garlic..then follow Jain step
For heavy bottom pan put olive oil..satue capsicum and zucchini first cook for 2 minutes add boiled baby corn, sweet corn, peas, broccoli, tomato saute for a minute add all herbs oregano, chilli flakes, dry thyme, dry rosemary, dry basil, black pepper powder (optional), salt as per taste again cook for half minute then mix the pressure cooked rice and daal khichadi in stir fried veggies properly..
Garnish with chopped parsley/ coriander. Serve the spicy Mexican khichadi hot..
You can change the quantity of chilli flakes and black pepper according to your taste.. do not add carrot, ginger, garlic, onion, in Jain Mexican khichadi..
